Healthy Stuffed Pepper Recipe

A healthy stuffed pepper recipe? Aren’t they good for you any way you make them? Why yes they are, but we can make them even healthier with a couple of substitutions. Note* The peppers in these photos were made with ground beef, but the recipe in this post will call for ground turkey. (You are free to use ground beef and rice if you desire.)

Ingredients: For 6 peppers  Oven: 400º  1hour (approx)

2lb ground turkey                                                    

1 10 oz pkg frozen riced cauliflower    

1 medium onion, chopped                   

28 oz crushed tomato   

 Seasoning:

♦ 1 tsp salt   

♦ 1/2 Tbl Basil 

♦ 3 Tbl ketchup

♦1tsp pepper 

♦ 1 tsp onion powder

♦1/2 Tbl  Rosemary

♦ 1 tsp chili powder

♦Grated parmesan

♦ Shredded cheese if desired to the top when removed from the oven

   Preparation

Peel and chop the onion and add to your ground turkey. In a frying pan, cook and stir over medium heat until the meat is no longer pink and the onion is tender. Drain if necessary and place into a large mixing bowl.

Clean the peppers. This recipe calls for 6 peppers. Green peppers were on sale this day so I used them. You can use any color pepper you like. In fact, mixing the colors is a fun way to get your nutrition!

Next, pour the riced cauliflower into your pan and stir over medium heat just until thawed, and then add to your meat. Add your seasonings and combine well. Add as much parmesan cheese as desired, or none. The cauliflower has the same texture as white rice yet adds a wonderful sweetness to this recipe. I will never use white rice again. So good!

Place peppers into a large casserole dish.

Using a large spoon, fill the peppers to the top and pack slightly. Add 1/4 cup of water to the bottom of the pan.

Cover tightly with aluminum foil and place in the center of your oven.  Bake for approximately 1 hour or until fork-tender. Remove foil and top with shredded cheese if desired. Let sit until cheese is melted or until cool enough to eat. Enjoy!
