Breakfast made easy! Try these mini quiches! So easy to make ahead and have a healthy breakfast on the run.

A good breakfast, no matter what time of day you have your first meal definitely sets the stage for your eating pattern, so it is very important to begin with a healthy, satisfying meal. These quiches are just the thing to get your body going In the right direction and they are low carb for you keto dieters.

Ingredients: (my recipe. Feel free to omit or add whatever you desire)

  • 1 dozen medium eggs
  • 1 small onion, diced (if desired) or onion powder to taste
  • 1 cup fresh baby spinach, chopped
  • 1 cup chopped turkey bacon, cooked
  • 1/4 cup heavy cream
  • 1 cup cottage cheese
  • 1 Tbl cumin
  • salt and pepper
  • 2 muffin tins that hold 12
  • non-stick spray
  • Shredded cheese to top it off-if desired

Directions: Heat oven to 350°

In a frying pan, add onion and chopped turkey bacon. Cook and stir until the bacon is heated through and the onion is tender. (Turkey bacon is great because it just needs good heating and is much healthier too.)

 Chop your spinach or other greens of your choice. In a large bowl, whisk the eggs and heavy cream together until lightly frothy.

 Add all of your ingredients to the egg mixture and mix until well folded.

Spray the muffin tins with non-stick coating and with a half-cup measure, begin scooping the mixture into the tins. It is okay to fill them to the top.

Bake for 40 mins and check for browning and pulling away from sides. Add shredded cheese to the top and return to the oven. Shut off your oven at this point and allow the cheese to melt. About 5 minutes.

Store these in the fridge for up to 3 days and freeze those that will not be eaten in that time frame. Makes 24 quiches.

Serving: 2 quiches. Approximately 70 calories per quiche.

  • 1/2 cup packed stemmed kale
