Eating Healthy On The Go/ How to avoid the fast-food trap

I am a Minnesotan born and raised and have done some exploration of other States. I have always returned. The scenery is beautiful, and though our winters can be brutal there is even more beauty in a pristine forest covered in snow.

On to my topic.

As you may know, I am also a home health care worker who is on the go 5 days per week and several of those days I have more than one consumer to visit. I am fortunate to be able to stop at home between consumers to eat a healthy meal for lunch.

Eating healthy on the go is a concern for a day when I work out of town. One easy solution is to prepare meals ahead of time. I enjoy healthy wraps and these are easy to prepare and store well in the frig.

Cook chicken breasts or whatever meat you prefer, slice when cool and store in an airtight container. A wrap goes together quickly when you have all of the ingredients prepped and ready. I use spinach wraps. They are healthy and I love the taste and texture.

If you prefer a hot meal on the go, there are insulated travel cups for soup or hotdishes and there are lunch boxes that heat and even cook a small meal right in your vehicle. I no longer use a microwave and would completely toss it out of the home if possible but my husband scoffs at the fact that microwaves destroy all nutrients in your food.

Subway is a healthier option than most fast-food restaurants and I admit to visiting them a couple of times in a month, simply because I like their spinach wraps!

If you want to save money though, preparing your lunch ahead of time is the choice to make when eating healthy on the go. If you make this a regular part of your nightly routine it is easy to stick to a healthy diet.

For a tasty make-ahead breakfast bake that stores well in both the freezer and the frig, try this recipe:

Easy Breakfast Bake

Note that my recipes are easy because they don’t require precise measurements lol. Chop 1 onion,1pepper of your choice and saute’ in 3T of butter. Set aside. Brown your breakfast meat. I use turkey sausage. 1 whole package of links. No meat is fine as well.

Chop the meat and add to onion and pepper. Take 1 dozen eggs and 4 T milk, whisk in a large bowl, adding salt, pepper and whatever seasonings you like. Stir some grated cheese of your choice into the eggs and add your onion and pepper mix.

Pour into a 9×13 or equivalent greased or sprayed pan, sprinkle more cheese on top and bake at 350 for 25-30 mins or until set and lightly brown. Cool, cut into equal portions and store in frig or freezer. Re-heat in the oven or on the stove in a covered pan. (Notice I didn’t say microwave?)
